Fresh and clean sorbet with prosecco and fresh fruit

Combine the Prosecco, water, and sugar in a small saucepan over medium heat.
Bring the mixture to a boil.
Cut peaches in half, remove pits, and peel.
Puree peaches.
Add the peach puree, remove from the heat, and cover.
Let stand for 10 minutes
Refrigerate the mixture until cold, about 2 hours.
Pour into pre-cooled gelato maker and follow the instructions on your machine.
