In Italian, cacciatore means "hunter" Chicken Cacciatore is prepared "hunter-style" with onions, tomatoes, and wine.

Wash and dry the chicken, cut into pieces pieces
Cut the onion into 4 pieces
In a large skillet, saute the garlic, whole carrot, whole celery, onion pieces and rosemary.
Add the chicken and let it brown very well on both sides
Season both sides of the chicken with salt, pepper and crushed red pepper.
Pour in the white wine and let it evaporate
Add the olives and sage and cover.
Simmer for about 30 minutes, adding ½ cup of water or chicken stock if necessary.
Remove lid and allow the gravy to thicken a bit.
