This is a fun and adventurous gelato flavor that uses the uniquely Italian amaretto cookie, as well as bittersweet chocolate.

Chop the chocolate into pieces about the size of commercial chocolate chips and place in a large bowl
Heat the milk (7 oz) and sugar (4oz) in a medium sized saucepan, stirring until sugar is dissolved and it just begins to boil
Pour the hot milk over the chopped chocolate and whisk vigorously until all the chocolate is melted and you have a smooth shiny mixture
Whisk in the heavy cream (7 oz) and the vanilla. Cool
When cool, pour mixture into your gelato/ice cream machine and follow the instructions for your particular machine.
Just before removing from gelato machine, as mixture is almost done, add the broken amaretti cookies and the amaretto and allow it to be incorporated into the gelato.
Tip: If you're in a hurry you can cool the mixture by placing the bowl over another bowl filled with ice. Stir continuously until your gelato mixture is cool enough to pour into the gelato freezer.
