On Thursday evenings at Villa Eddarella on our Soriano vacations, one of the dishes we serve is this incredibly simple, but delicious onion dish. Not a week goes by that guests don't ask Carla for the recipe, so here it is!

Drain all of the liquid from the coctail onions, rinse, and soak in cold water for about 20 minutes
Take a large non stick pan and melt about 1/2 stick of butter with a tablespoon of black pepper and a 5 tablespoons of sugar.
When the sugar is starting to brown, add the drained and rinsed onions.
Add a pinch of salt Cook for about 30 minutes
or until the onions become caramelized.
Add more sugar if needed. If the onions feel hard add a ladle of hot water and continue cooking for another 10 minutes
