In a pot, add the milk with the sugar, the cinnamon stick and the lemon peel. Bring to a boil.
Meanwhile, add the egg yolks to a bowl and mix them with a little bit of cold milk and the cornstarch until smooth.
When the milk is boiling, remove from heat and remove the lemon peel and the cinnamon stick.
Add the mixture of the yolks and cornstarch that you just made.
Mix vigorously with a wire rod and put the pot again in the heat until the mixture thickens.
Once it thickens, remove it from the heat and pour it onto a serving plate.
Pour some sugar on top and burn the sugar with a specific iron tool (optional). It is ready to eat!
