Pici is a handmade eggless pasta with a pesto sauce

Mix the pasta ingredients. Form dough into a ball, and cut into thirds.
Flatten each piece with your hands (like a focaccia.) Poke it with your fingers, brush with olive oil, and allow to rest for 10 mins.
Make the pici by rolling pieces of the flattened dough on a counter top until they are rounded, long strings of pasta ( about 12 inches long, and about the thickness of your pinky finger.)
Lightly toast pine nuts in a pan
Place the garlic, basil and salt in a blender , blend briefly
Add the toasted pine nuts to the blender and blend well
Pour this mixture into a seperate bowl
Add the grated Parmesan cheese and olive oil
Mix with a spoon
Boil water and cook pasta
Remove from heat THEN mix in the pesto sauce
