Sauteed peppers, onions, and tomatoes are a perfect side dish.

Ingredients
4 bell peppers (red and yellow)
1 onion
1 carrot
1 stalk of celery
1 can roma tomatoes
2 tbsp olive oil
1 cup dry white wine
salt
pepper

Preheat oven to 150 C (300F)

Wash and dry the bell peppers and place them in the pre-heated oven.

Roast peppers till skin begins to blister

Finely chop the onion, carrot and celery.

In a large skillet, heat the olive oil and add the chopped vegetables

Saute the vegetables for a few minutes

Pour in the wine and let it evaporate

Add the salt and pepper

Crush the canned Roma tomatoes with your hands and add to skillet.

Adjust salt and pepper as needed

Remove peppers from the oven

Peel the whole peppers

Cut peppers in half and remove seeds

Slice the halved peppers, add them to the skillet

Cook for about 20 minutes
