Our week begins in the heart of Madrid at the newly renovated Intelier Palacio San Martín, an absolutely beautiful boutique hotel located in the historic center of the city. Just 300 meters from Puerta del Sol, this 19th-century building is a designated Cultural Heritage Site and was formerly the first United States embassy. Despite being in the center of it all, the hotel is tucked away in a quiet area, making it the perfect retreat after a day of exploring.
The Intelier Palacio San Martín offers beautiful modern amenities, while retaining its historic charm. Its central location places you steps away from Madrid's most iconic landmarks, including Plaza Mayor, Gran Vía, and the Royal Palace. You’re within walking distance of just about everything in downtown Madrid—step outside and find yourself on some of the city’s most desirable streets in moments. From rooftop aperitifs overlooking the city to hidden culinary gems where locals gather, you’ll savor the best of Madrid’s iconic traditions, with the perfect home base to return to each evening.
Beyond the city, venture into Spain’s picturesque countryside, visiting the homes of locals who open their doors—and their hearts—to share their way of life with you. Whether it’s cooking classes in private homes, learning the passionate art of Sevillanas, or dining on rustic family recipes at century-old farms, every encounter will leave you feeling like family.

Get ready to explore beyond Madrid with a mix of culture, creativity, and tradition. Shape your own glassware at a historic royal glass factory, learn the intricate steps of traditional Spanish dances, and cook up authentic local dishes with our dear friend Mireia in her beautiful countryside home. Wander the charming streets of Toledo, a city steeped in history and architectural beauty, and indulge in a delightful marzipan workshop led by a passionate local artisan. For a deeper cultural connection, we’ll visit a traditional Spanish ranch, or finca, where you’ll gain a firsthand understanding of Spain’s iconic bulls and the heritage they represent, as well as enjoy a feast of Iberian delicacies.
At the ranch, we’ll meet locals who have dedicated their lives to raising these magnificent animals. On a thrilling 4x4 tour, you’ll come face-to-face with the bulls in their natural, open environment, witnessing how free and well cared for they are. The ranch also raises authentic Iberian pigs, integral to Spain’s culinary traditions. After the tour, we’ll enjoy a rustic and flavorful dinner right at the finca, featuring Iberian cured ham, chorizo, and a variety of other meats that showcase the rich flavors of the region.
We’ll also spend time in charming villages like Chinchón, sip award-winning wines at family-run wineries, and relax in Madrid’s sprawling Retiro Park like a true Madrileño.

And in true Spanish style, dinner doesn’t even start until around 10:00 PM. Don’t worry—we’ll keep you fueled throughout the day with incredible food and wine, and our mornings will have a later, relaxed start so you can enjoy every moment.
